Meal prep for the week

So, since I’m still sick and don’t have any running related things to share other than how upset I am about not being able to run right now I thought I could share my meal prep for the week. I’ve been waiting for an opportunity to do more food posts anyway, so I guess this couldn’t be more perfect.

Every Sunday I make my lunches and dinners ready for Monday to Friday. I don’t bother prepping my breakfasts because I always eat oatmeal with banana and some type of berry, very easy to just make when I wake up. I am very boring when it comes to food, but that’s just the way I like it. For lunches this week I tried making protein muffins, but they didn’t really turn out the way I wanted. I used the same stuff as I use to make my protein waffles, so no harm done with the taste. Thank God, haha! I also tried adding blueberries and raspberries to a few.

For the dinners I needed 2 bags of frozen broccoli mix (that’s broccoli, cauliflower and carrot), a bag of frozen broccoli, asparagus, tofu “chicken” fillets, 2 whole grain pita pockets, and organic whole grain couscous. Why is there a box of pasta there, you might wonder. My original plan was to have whole grain pasta, but then I remembered we had couscous so I did that instead. So 2 days with pita pockets and 3 days with couscous.

I like using frozen veggies because they are super cheap and I like how easy it is to just cut the bags open and pour the already perfectly cut veggies into the pan. I don’t mind fresh veggies, those are the best, I just like saving time and doing things the quickest and easiest way, haha. I’m lazy like that!

And here are my meals for the week! For breakfast I’ll have oatmeal with banana and some berries, like I said earlier, and for snacks I’ll have Questbars, rice cakes, yoghurt and/or fruits – depending on what I have laying around and what I crave at the moment.

  1. Protein muffins are SUCH an awesome idea.! wow that is so creative. and your meals are beyonddd healthy. wow. I just had a blueberry scone and starbucks coffee for lunch. oops. I’ll need to take more tips from you. 🙂

    I use frozen veggies or spend a little extra on pre-cut fresh veggies just so I don’t have tot take the time to peel/cut as well 🙂

    • Thank you! 😀 Yea, pretty much haha. I just add different spices to the dinners, different berries etc to breakfast and stuff like that. If I don’t plan well it gets more random though..

    I hope you feel better soon! Sounds a little like the flu, my mom got it right after the trip to Bergen.
    My plan for the week (weekend) is movienight. And then I don’t know. My favourite snack is of course chocolate, haha! Did I hear healthy much?!

  6. I love frozen too! Fresh is great sometimes, but you can save with frozen. Your food looks great and the protein muffin/waffles are what you need. I am always looking for ways to get more protein in w/o making shakes. I am lazy too, cleaning the blender is a lot of work lol
